1 tsp oil 

1 onion finely chopped 

4 garlic cloves – crushed 

14oz can of chopped tomatoes, or 2 cups of fresh tomatoes skinned and chopped 

2 tblsp tomato puree 

Juice of 1 lemon 

2 tsp Dijon mustard 

1 tsp Worcestershire sauce 

1 tsp chilli powder or a few drops of Tabasco sauce – or both for the brave! 

2 tblsp tomato sauce 

2 tblsp vinegar – cider or white wine work best, if using plain vinegar only use 1 tblsp. 

½ tsp salt and pepper 




  • Heat oil and sauté onion and garlic over a low heat until soft golden and translucent 
  • Add canned or fresh tomatoes and tomato puree and cook gently until sauce reduces and thickens. 
  • Stir in the remaining ingredients and season to taste. 
  • Serve hot with grilled food
