Dorothy’s Wheaten Bread 

This recipe belongs to Dorothy Mc Manus, and is my all time favourite wheaten bread recipe it is perfect with a slice of cheese, and freezes perfectly. Make a couple at a time and freeze one! You can freeze in slices and then ration yourself!  

Ingredients: 

14oz coarse wholemeal 

2oz porridge oats 

4oz plain flour 

2oz granulated sugar 

2oz cookeen 

1.5 tsp baking soda 

1 tsp salt 

1 pint buttermilk 

 

Method: 

  • Preheat oven to 180° 
  • Mix dry ingredients together in a large bowl 
  • Cut and rub or grate cookeen into dry ingredients 
  • Mix in buttermilk using large metal spoon. You may not need to use all the buttermilk, or you may need to add a little sweet milk depending on the type of flour you used 
  • Turn mixture into a greased 2 lb loaf tin or 2x1lb loaf tins and bake at 180° for 55 minutes
