Chicken Curry


2tbls oil  

1 onion – chopped  

1 clove of garlic – crushed  

1 eating apple – peeled and chopped  

tbls curry powder (medium or mild)  

Squirt of tomato ketchup  

1 pint of chicken stock  

200mls fresh double cream  

tbls garam masala (optional but good) 

Left over chicken (approx 180g per person) or 1 chicken breast per person  



  • fry onion, garlic and apple in oil until soft  
  • add curry powder (and raw chicken if using) and cook for a further 5 mins  
  • add squirt of tomato ketchup, mix in and add chicken stock  
  • simmer for 15 mins, until chicken is cooked and stock reduced by half  
  • add cooked chicken if using leftovers, cream and garam masala and bring back to boil (thicken if necessary)  
  • served with boiled rice and naan bread.
