This recipe is from Nadiya Hussain, the Great British Bake off winner, and served on a burger it is a complete game changer!! 



3 tblsp Olive oil 

3 cloves of garlic, chopped 

1 small onion, finely diced 

1 tsp chilli flakes 

450g streaky bacon, finely sliced 

1 tblsp instant coffee (seriously – you have to try it!!) 

125ml hot water 

40g soft brown sugar 

60ml malt vinegar 

85ml maple syrup 




  • In a frying pan over a medium heat heat oil and add onion, garlic and chilli flakes and cook until soft 
  • Add bacon and cook. 
  • Stir instant coffee into hot water and add sugar, add to the bacon and onion mix 
  • Add the vinegar and maple syrup and turn down and cook gently on a medium/low heat for at least an hour, until the liquid has reduced and takes on a sticky jam texture. 
  • Serve on burgers
